What is the protein fluff?

The sweet snack is quickly made. Fresh, chilled eggs, something to sweeten and a little salt – that’s all you need. Since you only need the egg white and not the yolk, it is best to keep the yolk in a small tin in the refrigerator and use it for other dishes, for example for a spaghetti carbonara, an omelette or a cake. That way nothing is wasted.
Ingredients for the basic recipe:
- 2 egg whites (about 66 grams)
- 7 grams erythritol
- 1 pinch of salt

- Separate the egg white from the egg yolk. The best way to do this is to beat the egg shell on a bowl so that the shell breaks in half. Let the yolk slide alternately from one shell to the other so that the egg white flows into the bowl. The egg yolk then goes into a separate bowl and can be used for other dishes.
- Beat the egg whites with a mixer at the highest setting until stiff. Meanwhile, add a pinch of salt and the erythritol. Mix until the egg whites are completely stiff and you can turn the bowl upside down without the beaten egg white coming off the bowl.

Are raw eggs dangerous?
Many people immediately think of raw eggs as salmonella – and indeed raw eggs can contain these bacteria. “They often sit on the shell of the eggs. By washing them with hot water ( via 70 degrees Celsius!), the salmonella can be destroyed. This reduces the danger, but still does not exclude it. If you still want to use fresh eggs, you should only use eggs that are only a few days old, whose shell is intact and which have been refrigerated throughout. However, people who have a weakened immune system, for example due to chronic diseases, should refrain from eating raw eggs, as should children and the elderly.
