  • 1 kg watermelon
  • 150 g goat cheese (or feta)
  • 4 sprigs of mint
  • 1/2 medium sized lime(s)
  • 2 EL Olive oil
  • 2 TL honey
  • Salt

Preparation  Goat cheese and melon salad

  1. Remove the skin and seeds from the melon and wash the mint. Dice the melons, cut the mint leaves into thin strips, crumble the feta and put everything together in a bowl.
  2. For the dressing, mix the juice of the lime, honey, pepper and salt.
  3. Then slowly trickle in the oil and stir until a creamy liquid is obtained.

Shrimp skewers with melon and avocado

ingredients for 8 pieces

  • 1 pod of chili
  • 1 clove of garlic
  • 2 cm ginger
  • 1 bunch of mint
  • 250 ml coconut milk
  • 5 EL Lemon juice

  • 24 medium-sized shrimps (TK or fresh, ready to cook)
  • 1 medium sized avocado(s)
  • 300 g watermelon
  • 1 EL Coconut oil

Preparation  Shrimp skewers with melon and avocado

  1. For the marinade, wash and clean the chilli pepper and cut into rings.
  2. Peel the garlic, peel the ginger and chop both roughly.
  3. Wash the mint, shake dry and chop roughly. Then puree all ingredients for the marinade using a food processor or hand blender.
  4. Mix the shrimps with the marinade in a bowl and marinate in the refrigerator for about 1 hour.
  5. Cut the avocado in half and remove the core. Remove the flesh with a tablespoon and cut into large cubes.

  6. Dice the watermelon as well.
  7. Put the marinated prawns on skewers alternating with the watermelon and avocado cubes.
  8. Melt the coconut oil in a pan and fry the skewers in it for about 6-8 minutes, turning them once and serving while still hot.

Sweet melon ice cream

Perfect in the summer: this Sweet Melon ice cream has few calories but lots of vitamins A and B – good for skin and heart.

  • 160 g cantaloupe melon(s)
  • 2 TL honey
  • 2 squirts lime juice
  • 160 g honeydew melon

Preparation  Sweet melon ice cream

  1. First the cantaloupe melon, then the honey melon with half of the honey and half of the lime juice in the blender.
  2. Now alternately fill a layer of cantaloupe and a layer of honeydew melon into the moulds. After each layer, freeze for 1 hour, and finally place the ice cream creation in the freezer for another 4 hours.

In summer we do not feel like eating hearty food that is heavy on the stomach. So it has to be light, tasty and fast: This antipasto with melon, ham and feta comes just in time.

  • 1 handful of arugula
  • 80 g Serrano ham
  • 1/2 medium sized sugar melon(s)
  • 100 g feta
  • 2 medium-sized fig(s)
  • Pepper (from the mill)
  • 1 EL Balsamic cream

Preparation  Antipasti with melon and ham

  1. For the antipasti, first wash the rocket, dab dry and arrange on a plate or a nice wooden board.
  2. Cut the melon into little boats of about the same size / slices and place them on the rocket bed.
  3. Remove the ham from the package and simply drape loosely over the melon wedges.
  4. Quarter the figs and add them. Crumble a little feta on top, pepper and sprinkle with balsamic cream, done!
